1. Fruit Cookies

          Ingredients

125 grams of butter, 125 grams icing sugar, 1egg, ½ teaspoon vanilla essence, 250 grams plain flour, 50 grams red or green glace cherries, chopped, 50 grams raisins chopped.

          Procedure

    1. Mix butter and sugar till fluffy and creamy;
    2. Add egg and vanilla essence, continue mixing;
    3. Stir in flour cherries and raisins till a soft dough forms;
    4. Heap teaspoons of biscuit dough onto two greased baking trays;
    5. Bake in preheated oven for 15-20 minutes on convention 200*C

The no of biscuits made will vary according to the size of the cookies.

2. White Bread

Ingredients

500 g plain wheat flour , 10g dry yeast, 20g sugar, 20g butter, 1 teaspoon salt, 1 and quarter cups warm water, quarter cup fresh milk (Susu Lembu Asli)

Procedure

    1. Dissolve yeast and sugar in quarter cup warm water and set aside for 10 minutes it it bubbles;
    2. Dissolve salt in 1 cup warm water
    3. Add yeast mixture and cup salt water to the flour and knead till dough forms;
    4. Place dough on table, apply butter to palm and knead till dough is smooth;
    5. Place dough into a greased loaf tin, cover with a piece of damp cloth and bake on Convention 40*C for 30 minutes;
    6. Once baked dough has rised, them remove damp cloth, brush dough with fresh milk and bake immediately on low/bake 230*C for 20 – 25 mins.
    7. When bread has baked , let stand before removing from tin;
    8. Slice and serve.

3. Plain Butter Cake

Ingredients

8oz self raising cake flour, 8oz of butter, 8oz of sugar, half teaspoon baking powder, 4 eggs, (yolk and white to be seperated), one table spoon of Vanilla essence

Procedure

    1. Mix sugar and butter in a mixing bowl on fast speed for 3 minutes until the mixture blends to a whitish yellow colour;
    2. Add vanilla essence to the butter sugar mixture and mix well such that the essence is evenly spread;
    3. Add flour to the above and mix on low speed of an electric mixer until all ingredients are moistened, then beat on medium speed for 4 minutes. Scrape down sides of the bowl occasionally;
    4. Add egg yolk first and blend for 2 minutes and then add egg white and blend for a further 2 minutes.
    5. Place cake mix into a greased round cake pan. cover with a piece of damp cloth and bake on Convention 40*C for 30 minutes;
    6. Bake in preheated oven for 15-20 minutes on convention 190*C
    7. Cake is baked if it springs back when lightly touched in the centre;
    8. Allow 5-8 minutes before inverting onto a plate.
